Eliminate the potato usually found in your frittata

Whether you are on the move or at home a frittata is a quick, easy breakfast. I make mine in a round frying pan and if I’m on the move I fold it in half so I can eat it like a sandwich. You can use whatever ingredients you like but here is a favourite of mine:
Ingredients:
20g each chopped chorizo, broccoli and grated cheese (I used mozzarella this morning)
30g each of chopped smoked back bacon and courgette
2 eggs gently whisked
Method:
- Add the meats to the pan on a medium heat to release the juices. About 5 minutes.
- Add the vegetables and fry till lightly softened about another 5 minutes
- Add the whisked egg and cook the bottom for about 2-3 minutes.
- Sprinkle on the cheese and put under a hot grill for another 2-3 minutes.
Notes:
This serves 2 people and is 175 calories per portion.
I served mine with Dr Wills Tomato sauce which is available at Ocado or online.
